Zucchini, Avocado & Sun-dried Tomato Salad

On the regular, I hear from people who ask, “If I want to eat vegan, what is there to eat other than salad?” Besides fruit, salad and nuts, what else can you eat?

I’m a firm believer in being creative in the kitchen, which has taken my options for meals to a whole other level. Seriously, you can be creative. You can experiment with flavors. You don’t have to get it right every time you prepare food. Sometimes, you’ll try things and they will be good and sometimes they’ll be nasty. Give yourself freedom to explore.

The other night, I was not sure what to prepare. I knew that I had specific ingredients but also knew that I wanted to eat raw food and not cooked. What I’m sharing with you is a combination of ingredients that I had in the kitchen. I hope you enjoy it and it inspires you to explore.


  • 1 medium zucchini

  • 1/2 medium sweet potato

  • 1 portobello cap

  • 1 avocado

  • 1/2 red onion

  • 1/2 cucumber

  • 1/2 cup of diced sun-dried tomatoes

  • 4 leaves of fresh basil (finely chop)

Dressing (double the recipe if you enjoy a lot of dressing)

  • 3 tbs extra virgin olive oil

  • 1 1/2 tbs of apple cider vinegar

  • 2 tsp of agave nectar

  • sea salt

  • cumin

  • oregano

  • garlic powder

  • black pepper

  • paprika

Equipment needed

  • spiralizer

  • whisk

  • medium size bowl


  1. Spiralize zucchini and sweet potato and place into a medium size bowl. Use a knife and a fork to chop it up since it will be very lengthy from the spiralizer.

  2. Chop up the portobello and cucumber in bite sized cubes.

  3. Dice the red onion and the basil

  4. Add all of these prepared ingredients to the bowl.

  5. Add dressing ingredients to a bowl and whisk until it’s mixed well. If you need to double the recipe, do it. It’s your food and you want to enjoy it. ;) I didn’t give measurements for the seasonings because everyone is different. Use your discretion based on what you enjoy.

  6. Dice up the sun-dried tomatoes and cube the avocado.

  7. Add the dressing to the veggies and lightly folk until all the dressing is distributed.

  8. Taste it. If you need to add something else to it, by all means do it.

  9. Sprinkle dried oregano over it and enjoy!

This is a simple, light, fresh, and tasty recipe. It’s a wonderful alternative to the simple salad and incredibly tasty. If you have any questions, don’t hesitate to ask.
